Glycyrrhizin is a triterpenoid saponin glycoside extracted from the liquorice root Glycyrrhiza glabra that produces an odourless white crystalline powder that is soluble in hot water, but insoluble in cold water. It is used as a natural non-caloric sweetener that is 50-100 times sweeter that sucrose (sugar). It has a licorice-like taste with slow onset but leaves a strong lingering aftertaste. It is also used as a flavour enhancer and as a foaming agent in some non-alcoholic beverages.

Common Uses

Used in baked goods, frozen dairy desserts, hydrolysed vegetable protein (HVP), bean paste, non-alcoholic beverages, root beer, sugar preserves and confectionery, soft and hard candy, frosting, liqueurs, vinegar, pickles, soy sauce, chocolate, vanilla, gelatin, pudding, and chewing gum.
