E921 — пищевая добавка, антифламинг, антиоксидант: цистин, L-cysteine hydrochloride monohydrate (Е921)

A naturally occurring sulphur containing amino acid, produced by the digestion of proteins. It is then broken down to L-cysteine from which glutathione can be synthesized, one of the body's major anti-oxidants. One of the richest sources of L-cystine is unpasteurised or low-heat pasteurised undenatured whey proteins from milk. It is used as an improving agent and flour treatment agent to enhance and stabilise bread and bakery products.
