Disodium inosinate is the disodium salt of inosinic acid, otherwise known as IMP, which is a nucleoside that is important in metabolism. May be prepared from meat or sardines; not permitted in foods for infants and young children. Gout sufferers avoid. It is found in instant noodles, potato chips and snacks, savoury rice, tinned vegetables, cured meats, packet soup. Asthmatic people should avoid inosinates. As inosinates are metabolised to purines, they should be avoided by people suffering from gout. Frequently contains MSG (621).

It is essentially an odourless, white crystal or crystalline powder that is very soluble in water. Commercially it is used in conjunction with monosodium glutamate as a flavour enhancer in foods, and has the ability to make bland and tasteless food taste wonderful.

Common Uses

Used in processed cheese, fat spreads, fat-based desserts, processed fruit, dried vegetables, canned or bottled vegetables, cooked or fried vegetables, breakfast cereals, pre-cooked pastas, batters, bakery wares, processed meat and poultry, semi-preserved fish and fish products, egg-based desserts, seasonings and condiments, soups and broths.
