Disodium guanylate is the disodium salt of guanylic acid also known as GMP. It is a nucleotide composed of guanine, ribose and one phosphate group formed during protein synthesis. It is an ester of phosphoric acid with the nucleoside guanosine. Commercially it is produced from dried fish, yeast extract, or dried seaweed. It produces an odourless, colourless white crystal or crystalline power that is soluble in water and is used in conjuction with glutamic acid as a flavour enhancer in food.

Isolated from sardines or yeast extract; not permitted in foods for infants and young children. Persons with gout, hyperactivity, asthmatics and aspirin sensitive's should avoid it.

Common Uses

Used in instant noodles, potato chips and snacks, savoury rice, tinned vegetables, cured meats, and packet soup.
