Sodium stearoyl lactate is an organic compound produced by combining stearic acid and lactic acid, with sodium hydroxide. The end result is a sodium salt which can be a white or slightly yellow powder, or a brittle solid with a characteristic odour, that is soluble in ethanol, but insoluble in water. It is used as an emulsifier, and stabiliser in baked and bakery products, and in other foods.
