Enzymatically hydrolyzed carboxymethyl cellulose is a semi-synthetic polysaccharide which is the sodium salt of a carboxymethyl ether of cellulose, hydrolyzed enzymatically with Trichoderma longibrachiatum under mild acidic conditions. Primarily it is used as a stabiliser with fat-extending properties.
