Soybean hemicellulose is a cell wall polysaccharide that is extracted from soy fibre using dilute sodium hydroxide. Soy fibre can be added to many different foods, and is available in many forms tailored to specific requirements. It is used as an emulsifier, stabiliser, and thickener in foods.
