Curdlan gum is a natural polysaccharide that is produced commercially by the bacterial fermentation of the mutant strain of Alcaligenes faecalis. Curdlan gum is tasteless and produces retortable, freezable elastic gels in food. It is also used to improve the texture of processed food, and acts as a firming agent, gelling agent, thickener, and stabiliser.
