Polydextrose is a polysaccharide composed of dextrose (glucose) containing small amounts of sorbitol and citric acid. It is commonly used as a sugar and fat replacer in many foods, as a source of soluble fibre, and can also be used synergistically with other high potency sweeteners. It acts as a humectant, stabiliser, and thickener.

Polymer of glucose, with some sorbitol. Produced by heating dextrose (glucose) in the presence of sorbitol and citric acid. Humectant and modifying agent in baked foods, modified carbohydrates, confectionary, chocolate, jam, ice cream, low joule foods. Binds water and protects against freeze damage. Suitable for diabetics. Seems safe in small doses, can cause diarrhoea in large doses (90g per day). Not to be used for babies or infants.

Common Uses

Used in baked goods, cakes, dessert mixes, gelatins, dessert sauces, puddings, salad dressings, confectionary, chocolate, jams, jellies, dairy and ice-cream, cereal products, beverages, nutrition bars, modified carbohydrates and low-calorie foods.
